Today I'm sharing my favorite Italian sauce, amatriciana. It's a delicacy I had the privilege of trying for the first time in Rome in 2016. Its real name is All'Amatriciana or alla matriciana, and it's an iconic traditional sauce in Italian cuisine. This sauce's legacy in Italian cuisine is such that it has been recognized by the Italian Ministry of Agriculture as a traditional Italian food product. Here's my version to surprise you!
Ingredients for 6:
400g of bacon
1 small onion
1/2 paprika
8 tomatoes
3 tablespoons of Neapolitan sauce
Salt, pepper and prapika flakes
Preparation:
In a large skillet, sauté the bacon, previously cut into small pieces. Sauté until crispy. Add the onion and bell pepper until softened. Then add the tomatoes along with the spices: salt, pepper, and flaked prawns. Continue stirring until combined and then add the Neapolitan sauce.
Time to serve the sauce alongside your pasta of choice. I suggest adding a little extra bacon for those who can't get enough of a little, and don't forget the Parmesan cheese. Enjoy!
