There's a wide variety of fried rice dishes across Asia. Thai rice is a delight. I had the privilege of visiting Thailand in 1997, visiting my friend Pan. We became very close during my exchange program in London. Touring Bangkok and Ayutthaya with my local friend is one of the trips I hold most dear. Learning about their culture and delighting in their cuisine was an honor. I was enchanted, especially by their rice, and today I'm sharing this recipe that Pan shared with me, which I use to surprise all my guests.
Ingredients for 4:
6 tablespoons of vegetable oil
½ chopped onion
1 cup of shrimp
3 eggs
2 cups of cooked rice
1 tablespoon of soy sauce
1 teaspoon of fish sauce
1 teaspoon of brown sugar optional
2 sliced tomatoes
Preparation:
Heat the wok for about 10 minutes, then add the oil and then the onion. Stir quickly until cooked. Add the shrimp and stir until tender. Add the eggs. To do this, make some space at the bottom of the wok and add them one at a time, stirring until incorporated. Then add the cooked rice, fish sauce, and soy sauce and stir until all the ingredients are combined. You can add brown sugar if you want a sweet touch. Finally, add the tomato and stir for 2 more minutes. Serve hot, garnished with ground pepper and lemon juice.
